Who: Cabernet
Cabernet is the most important variety produced in Chile and for good reason. The wines tend to offer the best of both the old and new worlds with plenty of fruit but are rarely jammy or sweet. In fact structurally is where these wines tend to shine, with more mineral base notes, brightening acidity and fine ripe tannins than similar Cabernets produced around the world, though there is no shortage of oak adding both tannins and spice here.
